COSELMAR, a 4-year project financed by the Région des Pays de la Loire at 2.1 M€, officially started on the 7th January 2013. The project is coordinated by Philipp Hess (IFREMER) and Sophie Pardo (Université de Nantes-LEMNA) and falls under the Federation for Research Institut Universitaire Mer et Littoral (IUML, FR CNRS 3473)*. COSELMAR has also been approved by the Scientific Council of the MSH Ange Guépin. Development of lipid oxidation during manufacturing of horse mackerel surimi ArchiMer

When fatty fish are transformed into surimi, lipid oxidation takes place, decreasing the quality of the product. This study was aimed to identify the critical stages of the process in terms of the development of lipid oxidation. Horse mackerels were transformed into surimi on a pilot line and samples taken (hand-skinned fillets = minced fillets, mince, washed and refined minces, paste, surimi and washing water). Most of the lipids were removed during the process and neutral lipids were lost in higher proportion than polar lipids. As a consequence, total lipids of surimi contained more polyunsaturated fatty acids (338 19 g kg(-1)) than total lipids of the minced fillets (220 8 g kg-1). The main goal of this work was to up-grade sardine (Sardina pilchardus) by-products using mild procedure, environmentally sound, in order to obtain valuable compounds involving moderate investment and low energy consumption. Hydrolysis and ultrafiltration techniques have been investigated. Firstly, selected enzymes have been calibrated in order to determine their optimal conditions with a model substrate and to permit the comparison between them. Improvement of lipid and phospholipid recoveries from sardine (Sardina pilchardus) viscera using industrial proteases ArchiMer

Enzymatic hydrolysis of sardine viscera by three broad spectrum proteases was investigated using the pHstat method (24 h, pH 8, 50 degrees C). After hydrolysis, three fractions (sludge, aqueous phase and oily phase) were collected. For each fraction, lipids and phospholipids were quantified and molecular weights of aqueous phase peptides were determined. Under these conditions, the degree of hydrolysis (DH) varied from 1.9% (Flavourzyme), 3.1% (Protamex) and to 3.3% (Alcalase). Dry matter distribution indicated that all hydrolysis performed increased solubilisation of proteins: protein recovery for each hydrolysis ranged from 57.4% to 61.2%. Optimization of hydrolysis of sardine (Sardina pilchardus) heads with Protamex: enhancement of lipid and phospholipid extraction ArchiMer

BACKGROUND: Fish by-products are not considered as valuable raw materials even if they usually contain valuable components such as lipids. Fish lipids are well known for their nutritional potential and health effects but their extraction remains problematic due to the use of organic solvents. Enzymatic hydrolysis such as the proteolysis of tissues can lead to lipid extraction. Recovery of valuable soluble compounds from washing waters generated during small fatty pelagic surimi processing by membrane processes ArchiMer

This work focuses on the treatment of washing waters coming from surimi manufacturing using ultrafiltration technology at a laboratory scale. Four membrane materials (poly-ether sulfone, polyacrilonytrile, poly vinylidene fluoride and regenerated cellulose) and 5 Molecular Weight Cut-Off (from 3 to 100 kDa) have been studied at bench laboratory scale using the pilot Rayflow (R) 100, commercialised by Rhodia Orelis. The investigation deals with the ability for membranes to offer a high retention of biochemical compounds (proteins and lipids). Seasonal variation in the antivibrio activity of two organic extracts from two red seaweed: Palmaria palmata and the introduced Grateloupia turuturu against the abalone pathogen Vibrio harveyi ArchiMer

The wide polarity range and highly polar compounds of two selected red seaweed, Grateloupia turuturu and Palmaria palmata were extracted using two different types of solvent, dichloromethane/methanol and methanol/water. Monthly in vitro antibacterial activities were studied using the microplate method against the marine bacteria Vibrio harveyi strain ORM4, known to infect abalone. Inhibition, slowdown and delay of Vibrio harveyi growth were investigated. Polar compounds of seaweed showed an activity against the abalone pathogen. The best activity was recorded from P. palmata collected in spring, with an inhibition of 7.9% of the bacterial growth. Preliminary 1H NMR profiles identified the differences between the extracts.

Ultrasound-assisted extraction of R-phycoerythrin from Grateloupia turuturu with and without enzyme addition ArchiMer

The aim of this study was to compare two processes for the extraction of R-phycoerythrin (R-PE) from the red seaweed Grateloupia turuturu: ultrasound-assisted extraction (UAE) and ultrasound-assisted enzymatic hydrolysis (UAEH). Process efficiencies were both evaluated by the yield of R-PE extraction and by the level of liquefaction. Experiments were conducted at 40 and 22 °C, for 6 h, using an enzymatic cocktail and an original ultrasonic flow-through reactor. R-PE appeared very sensitive to temperature, thus 22 °C is strongly recommended for its extraction by UAEH or UAE. However, the higher processing temperature (40 °C) clearly increased the extraction of water-soluble compounds (up to 91% of liquefaction). These two new processes are thus promising...

Valorization of the Macroalgae Sargassum Muticum by Enzymatic Hydrolysis, Interest of Surfactants to Improve the Extraction of Phlorotannins and Polysaccharides ArchiMer

The use of surfactants to improve enzymatic hydrolysis of the macroalgae Sargassum muticum has been investigated. Visible absorption spectroscopy has been used to quantify the solubilization of both polysaccharides and phlorotannins in the hydrolysates.   After total extraction, results showed that Sargassum muticum contained 2.74% (expressed in percent of the dry weight of the algae) of phlorotannins whose 32 % were in the cell wall. This result shows that it is important to access to the parietal phlorotannins. To reach this objective, we chose the enzymatic approach for destructurating the cell wall of the algae.
